Collard greens are great around the holidays, paired with slow cooked meats, and is a great side dish for barbecues and gatherings with friends. I love this recipe, and its quick, easy, and delicious!
Vegan Note: use vegetable stock for this recipe.
Ingredients:
1 quart stock, chicken or vegetable
1 bunch collard greens, or any kind you like
1 tbsp. garlic powder
1/2 tbsp. crushed red pepper
1/2 tbsp. nutritional yeast
pepper to taste
Preparation:
Wash and pat dry the greens, and roughly chop into a large dice.
Heat a medium-sized pot to medium high.
Add in the stock, greens, garlic powder, crushed red pepper, and nutritional yeast.
Let it come up to a boil, stir, cover with a lid and turn down the heat to medium low.
Simmer for 30-45 minutes until greens are soft and cooked through and enjoy!
