Crab Salad with Capers and Fresh Parsley

This delicious crab salad, is ready in minutes and great to make when you don’t have a lot of time. Serve over toasted bread, lettuce wraps, salad, or mix with pasta for an easy delicious meal!

Yield: 2 servings

Ingredients:

1 can crab meat packed in water, drained

2 tbsp. mayonnaise

1 cup plain greek yogurt

1 scallion, sliced thin

1 cucumber, peeled and diced

1/2 tbsp. old bay seasoning

1/4 tbsp. capers

1/4 tbsp. dill

1/2 tbsp. fresh parsley, minced

pepper, to taste

Preparation:

Wash all produce. Slice the scallions, peel the cucumber and dice. Remove the leaves from the stems on the parsley and mince. Drain the crab meat well and set aside.

In a medium bowl, mix together the crab, mayonnaise, greek yogurt, scallions, cucumber, old bay seasoning, capers, dill, parsley, and pepper.

Chill in the fridge for 30 minutes, and serve.
