Ratatouille is a traditional vegetarian stew. This is loaded with vegetables, so healthy and delicious! This is a family style, one pot dish that’s great for any night of the week. I love the use of spices that make a delicious twist on this classic dish.
1/2 cup golden raisins
1/2 white or yellow onion
2 garlic cloves
3 tbsp. olive oil
1 can stewed tomatoes
1 can garbanzo beans
2 cups of vegetable broth
1 tbsp. cinnamon
1 tbsp. coriander
1 tbsp. cumin
1 tbsp. sweet paprika
1 tbsp. turmeric
Wash all produce. Cut the zucchini, squash, onion, and tomatoes into thin 1/4 inch slices. Peel and mince the garlic cloves.
Heat a large pot to medium-high heat.
Add the olive oil, onion, garlic and saute for 3-5 minutes. Add in all the spices, stirring constantly for 2 minutes.
Add in the zucchini, squash, tomatoes and cook for 10 minutes.
Add the vegetable stock, stewed tomatoes, garbanzo beans and heat to boiling.
Once boiling, turn down the heat to medium low, cover and let cook for 45 minutes. Stir in the golden raisins and cook for 5 minutes, and enjoy!
Serve with bread, rice, or couscous.
