Chickpea Salad with Cashews, Snow Peas, and Sweet Chili Sauce

There are so many wonderful flavors and textures in this salad. Chickpeas, snap peas, red pepper, coconut flakes, and cashews tossed in a sweet chili sauce  compliments all the ingredients so well. I love making this for summer parties and gatherings with friends.

Yield: 10 servings

Ingredients: 

2 cans Chickpeas

1/2 snow peas

1 red bell pepper

1/4 cup unsweetened coconut

1/3 cup raw cashews

1/4 cup dried fruit (pineapple, apricot, mango, any kind you like)

1/4 cup orange marmalade

1/4 cup sweet chili sauce

1/4 cup oil, canola, vegetable, or olive

Preparation:

Wash all produce.

Dice the red pepper, and snow peas in a medium dice.

Drain and rinse garbanzo beans.

In a large bowl: combine garbanzo beans, snow peas, red pepper, coconut, and cashews and toss.

In a small bowl: add the orange marmalade, sweet chili, and oil. Stir until well combined and mix into the salad. Keep refrigerated until ready to serve, and enjoy!
