This lovely cucumber salad is a great side dish for any barbecue, picnic, or any outdoor party with friends. It’s simple and so easy to make. Fresh vegetables paired with sweet wine makes it a great marinade.

Yield: 8 servings


1 cup red cabbage

1 cucumber

3 celery stalks

2 carrots

1/4 tsp celery seed

1/4 tsp dill

1 cup rice wine vinegar

1/2 cup moscato wine


Wash all produce, peel the carrots, and cucumber. Slice the cabbage, celery, carrots, and cucumber very thin. In a medium bowl add the carrots, cucumber, red cabbage, dill, celery seed, rice wine, and moscato wine. Toss well until everything is well coated. Let it sit in the fridge to marinate for 1-2 hours. Mix well and enjoy!
