I love cooking in the Fall. The smell of cinnamon and apples is so delicious. This recipe has less than 10 ingredients, quick to prep, and in a few hours you have a wonderful meal ready for two. I like to serve this with fresh vegetables on the side like green beans, and brown rice, or whole grains like quinoa, or farrow.
Yield: 2 servings
4 chicken thighs
4 roma tomatoes
4 gala apples
1 cup of water
1/2 tsp. cinnamon
1/2 tsp. salt
1 tsp. apple cider vinegar
Wash the apples and tomatoes. Peel the apples, remove the core and dice. Remove the tops of the tomatoes, and dice.
In the slow cooker add in the chicken, tomatoes, apples, water, cinnamon, salt, and apple cider vinegar. Stir and let cook on high 3-4 hours or on low 7-8 hours. Stirring occasionally.
Shred chicken or keep whole, and mix until everything is well combined. Serve with rice, pasta, or whole grains, and a side of veggies and enjoy!
