Overnight Oatmeal with Cherries, Coconut, and Cinnamon

Cherries, coconut flakes, and a touch of cinnamon, this is one of my favorites to make. It just takes a few minutes to prepare the night before and in the morning, you’re ready to start the day with a filling healthy breakfast! 

Yield:  1 serving

Ingredients:

¼ cup whole rolled oats

2 tbsp. golden raisins

½ tbsp. ground flax-seed

¼ tsp. cinnamon

1 tbsp. unsweetened coconut flakes

10 almonds

½ cup almond, rice, cashew, or soy milk

¼ cup fresh cherries, pitted or dried if out of season 

Preparation:

If using fresh cherries, wash and remove the stems, and the pits. Chop into small pieces and set aside.  

In a medium container, or mason jar fill with the oats on the bottom, add the raisins, flax-seed, cinnamon, coconut, almonds, and milk. If using dried cherries add here. 

Stir and add the milk. Cover and let sit overnight in the refrigerator.

In the morning add the fresh cherries and you’re done!
