This lovely stir fry is my go to recipe when I’m feeling like take out. Stir fry is an easy dish you can make in minutes with what you have in the fridge. Combine any fresh veggies you have, with a simple sauce and serve it over rice or noodles and you’ve got a tasty dinner in no time at all. I love using cashews in stir fry. There so rich and add great texture to this dish. The simple and sweet sauce goes so well with the somen noodles and fresh crispy vegetables, it’s one of my favorites to make!
Yield: 2 servings
½ cup raw cashews
oil (safflower, peanut, coconut)
½ cup snow peas
1 yellow bell pepper
1 green pepper
½ cup broccoli
¼ cup celery
1 garlic clove
1 tbsp. sesame seeds
1 small orange
½ cup orange juice
½ cup sweet chili sauce
Bring a small pot of water to a boil and cook the somen noodles until al dente. Drain and toss with 1 tbsp. oil and set aside.
In a small bowl combine the sweet chili sauce and 2 tbsp. oil and mix until well combined. You can add some sriracha or chili sauce if you want a little heat.
Wash all produce, clean, and pat dry. Peel the carrot and slice thin at an angle. Slice the yellow pepper, green pepper, and celery into thin strips. Peel the orange and cut into a small dice. Chop the broccoli into a small dice, and mince the garlic.
Heat a wok or medium size pan to medium high heat. Add 1-2 tbsp. of oil with all the veggies. Stir constantly and cook 2-3 minutes until the vegetables have brightened in color and still crisp in texture. Add in the garlic, cashews, orange juice and cook 1 minute. Toss in the sweet chili sauce and orange slices and cook 1-2 minutes. Serve over somen noodles and garnish with sesame seeds and enjoy!
