Warm Peanut butter, whole rolled oats, and chocolate chips. These bars are a great to make on a cool day, and a special treat to enjoy anytime!
Note: You can find vegan chocolate at health food supermarkets.
Yield: 8 servings
1 cup peanut butter (smooth or crunchy)
2/3 cup whole wheat flour
¼ cup vegan chocolate chips
1/2 cup whole rolled oats
1 scoop vegan protein powder (optional)
½ brown sugar, packed
2 tsp. vanilla extract
1 tsp. baking powder
½ tsp. salt
¼ cup almond milk
1-2 tbsp. oil (safflower, sunflower, or canola)
Pre-heat the oven to 350*F.
Using the paddle attachment for your mixer, cream the peanut butter, sugar, and vanilla extract and mix on high for 1 minute. Mix on low and slowly add the almond milk and mix until well combined.
In a small bowl; whisk together the whole-wheat flour, brown sugar, baking powder, salt, protein powder, and rolled oats.
Add half of the dry ingredients to the peanut butter mix and blend. Add the remaining half along with the chocolate chops and mix until well incorporated.
Drizzle the oil into a 9 x 12 square pan. Using a paper towel wipe the oil so it covers the bottom and up the sides about half way.
Add the peanut butter mix into the dish and press evenly into the pan. Bake 8-10 minutes until its cooked through and a toothpick comes out clean when testing. Let cool 5-10 minutes. Cut into bars or squares and enjoy!
