I love making veggie burgers. It’s loaded with healthy fiber and protein. Tastes amazing and is ready in just a few minutes! These are perfect at barbecues with friends or a nice dinner at home.

Yield: 2 burgers

Ingredients:

½ cup black beans

½ cup red kidney beans

1 tbsp. sunflower seeds

1 tbsp. crushed walnuts

½ cup kale

2 tbsp. ground flax-seed

½ tbsp. dijon mustard

½ tsp. black pepper

½ tsp. paprika

¼ red onion

1 tbsp. apple cider vinegar

2 tbsp. oil (sunflower, coconut, avocado)

Preparation:

Mash the beans with a fork or potato masher. Wash all produce and pat dry. Strip the kale leaves from the stems. Cut the onion and the kale into a small dice and mix in with the beans. Add in the sunflower seeds, walnuts, flax-seed, dijon, pepper, paprika, and apple cider vinegar. Mix until well combined.

Chill in the fridge for 30 minutes. Form mixture into patties.

In a small pan, add in the oil and lightly pan fry the patties 3 minutes on each side. Serve on hamburger buns and add any toppings you like.
