Good morning! For this week’s post I wanted to share a new favorite recipe! I have been upping my protein game while I train for my half marathon in September! So excited. So I made this lovely egg scramble and wanted to share it with you. This meal is packed with 40 grams of protein! It’s become a favorite in my household…..which is my apartment….so enjoy this filling and healthy meal and happy cooking!
Yield: 1 serving
1/2 cup ground turkey
1/2 cup fresh spinach leaves
pepper, salt, and turmeric – to taste
1-2 tbsp. of salsa
In a medium saucepan, cook the ground turkey on medium heat and add any seasonings you like. I added a little salt, pepper, and turmeric to mine. Stir and cook until temperature reaches 165*F. Turn the temperature down to medium low.
Wash the spinach leaves and slice thin and toss in the skillet.
In a small bowl crack the eggs, discard the shells, and whisk until light and a little frothy. Add into the sauce pan. Stir and toss scramble until eggs are cooked and everything is mixed well.
Serve with salsa and enjoy!
