This pasta salad is light, full of greens,and has just a hint of mustard. It’s the perfect side dish for cookouts with family and friends. Give this one a try and let’s get started!
Yield: 12- 15 servings
1 lb. pasta shells (any kind you like)
3 celery stalks
1 cup green cabbage
10 slices of salami
2 tbsp. whole grain mustard
2 tbsp. white vinegar
salt and pepper- to taste
Cook the pasta until al dente, drain in a colander, and run under cold water until cool. Let sit to dry out while you prep the rest of the ingredients.
Wash all produce. Dice the onion and radishes small. Cut the cucumber in half lengthwise and scoop out the seeds and discard, then dice small. Cut the celery into thin slices. Stack the salami slices together and cut into small dice size pieces. Slice the cabbage into thin slices.
In a large mixing bowl add all the ingredients together. Mix the cooled pasta, cabbage, radish, cucumber, celery, onion, salami, mayonnaise, mustard, and vinegar until well combined. Add salt and pepper to taste and enjoy!
