Simple Pea Soup

I love when the weather gets cooler and making comforting soups are the best. This soup has less than 10 ingredients and is quick to put together with minimal spices you probably already have in your pantry. This soup thickens up a lot once it cools, so if you want it thinner just add more broth or water when you heat it up. Serve with some sourdough and dairy free butter spread on the side and I’ll have this all week!

Yield: 8 to 10 servings

1 bag (16 ounces) dried split peas

1 quart vegetable stock or broth

2 cups filtered water.

1/2 white or yellow onion

1 tsp. turmeric (optional)

1 tsp. thyme

salt and pepper, to taste


In a large bowl, rinse and drain the peas a few times. Wash, peel, and dice the onion.

In a medium pot add the vegetable broth, water, peas, onion, turmeric, and thyme. Heat up to boiling, stir, and turn down the heat to medium low. Cover and cook for 30 minutes. Once peas are soft, take off heat.

Using an immersion blender or regular blender, blend until all ingredients are well combined and soup is smooth. Add more broth or water here until desired consistency is reached. Serve with bread or crackers and enjoy.
