Vegan Thousand Island Dressing

This dressing is great with salad, veggie burgers, raw veggies, and baked or roasted potatoes and vegetables too. It’s tangy and slightly sweet.

Yield: 8-10 servings

Ingredients:

1/2 cup vegan mayonnaise

1 tbsp. ketchup (sugar-free)

1/2 tsp. onion powder

1/2 tsp. turmeric

2 small pickles (about 2 tbsp. when minced)

1/2 tsp. paprika

1/2 tsp. black pepper

Preparation:

Mince the pickles and mix with all the ingredients in a small bowl and serve.
