This is a simple and savory dressing perfect with salads, zoodles, wraps, raw cut vegetables, roasted vegetables, burgers, ah I use it on everything! I love the balance between the sesame oil and the sweet pickles ginger.

Ingredients:

2 tbsp. olive oil

1 tbsp. pickled ginger and brine

2 tbsp. sesame oil

pinch of salt and pepper

Preparation:

Wash and peel the carrots. Use a spiralizer to make carrot noodles.  Wash and remove the apple core or cut around the core and cut the apple pieces into a small dice.

In a small bowl combine the olive oil, sesame oil, pickled ginger with the brine, and a little salt and pepper. Mix with a fork and add more oil/ brine to reach desired consistency.
