Loaded Raw Guacamole

I love raw foods! Eating fruits and veggies in the purest form possible is the best way to get nutrients into our bodies. This raw guacamole will fill you with energy, and tastes so creamy and bright. Get your food processor ready and let’s make some guacamole! I paired this with raw sweet potato slices, and it was so delicious together.

Yield: 2-4 servings

Ingredients:

2 avocados

1 lime

1 red bell pepper

1/3 bunch of cilantro (stems and leaves)

1 roma tomato

pinch of salt

1 sweet potato ( for serving)

Preparation:

Wash all produce.

Slice the avocados in half, remove the pits, and scoop out the flesh.

Juice the lime.

Slice the bell pepper and remove the seeds. Cut into smaller chinks.

Slice the sweet potato into thin slices and set aside.

Add the avocado, bell pepper, lime juice, cilantro, and salt and blend until well combined  and enjoy with sweet potato chips!
