This delicious tuna salad is packed with protein, it’s creamy and I love the addition of the walnuts especially with lots of dill. Try this one out for yourself. It’s a great meal to take to work as a sandwich, or on top of a big salad.

Yield: 4 servings

Ingredients:

2 small 5 ounce cans of tuna

1 cup fresh spinach

2 pickles minced, or 2 tbsp. relish

3 tbsp. crushed walnuts

1/2 tsp. garlic powder

1/2 tsp. dill

2 tbsp. mayonnaise

1 tbsp. olive oil

2 tbsp. white vinegar

Preparation:

Drain the cans of tuna and place in a medium size bowl. Add in the olive oil, white vinegar, and mayonnaise and stir. Mince the pickles and then the spinach leaves and add to the mix. Crush the walnuts and add in the remaining spices of dill and garlic powder and mix everything well. Season to taste and serve on toasted bread or a lovely salad and enjoy.
