Simple Crustless Vegetable Quiche

I enjoy breakfast any time of day, especially for dinner. Quiche is a simple glorified bigger omelet with any fillings you want. I love to fil these with fresh veggies or whatever I have leftover in the fridge to use up. This is a basic recipe so feel free to add any extras like ham, cheese, or extra veggies.

Yield: 1 quiche


6 eggs

3/4 cup milk of choice

1 cup mixed veggies: broccoli, peas, bell peppers, mushrooms, spinach, any kind you have on hand. I used cooked peas and green beans I had leftover in the fridge.

I used spices like paprika, salt, pepper, and turmeric in my recipe. Add any of your favorites, I used about a 1/2 tsp. of each.

cooking spray or use olive oil to lightly grease the baking dish.


Pre heat the oven to 350*F.

Lightly grease a pie dish, or glass baking pan. In a medium bowl add in the milk, eggs, all spices and whisk until eggs are beaten and mixed well. Add in your vegetables of choice and any other ingredients you want and stir until well incorporated. Pour mixture into greased baking dish and bake for 45 minutes. The center should be set and pass the clean toothpick test.

Serve with a side of potatoes, fruit, or dressed greens and enjoy.
