I love baked fish. I usually buy big bulk packs of fish fillets of tilapia, catfish, halibut, or whatever is the best deal at Sam’s club at the time. They’ re individually packaged so it makes prep much easier. The dressing makes the fish sweet and tangy giving it a wonderful flavor.

Yield: 2 servings

Ingredients:

3 fish filets

1/2 cup Italian dressing

2-3 tbsp. olive oil

Preparation:

Thaw fish in refrigerator overnight and when ready pre heat the oven to 350*F.

Remove fish from packaging and place on a single layer into a glass baking dish. Drizzle with olive oil and Italian dressing. Make sure to turn fish over and coat both sides.

*Note– you can also marinade the fish in the dressing while you thaw it in the fridge in a zip lock bag and then just drain and bake.

Bake in the oven 20-25 minutes until cooked through and flakes easily with a fork. Enjoy over rice, salad, on tacos, and more!
